On February 13, Health Service Center held a food education program "Casual Western cooking class using Noto Ingredients" as part of its student support program. 18 students (including 3 international students) participated in the class. Mr. Manabu Murakami the Chef of Kanazawa's restaurant "Meal", devised a menu using ingredients from Noto, and the event was held jointly with KEYPAT* as a Noto support project.
Under the guidance of Mr. Murakami, the participants were divided into six groups and cooked "Shalyapin Steak of Noto Pork" and "Butter Rice with rice grown in Noto". Mr. Murakami explained in an easy-to-understand manner how to cook shalyapin steak to bring out the umami of the meat, including the episode of how it was prepared in response to the request of Fyodor Shalyapin, an opera singer who visited Japan.
Shalyapin steak is characterized by the savory flavor of sautéed onions and tender meat, but it tastes even better if the meat is left to rest for the length of time it is cooked and the residual heat is used to infuse the meat juices.Students were surprised, saying that the steak was actually more tender and tastier than the meat they usually eat.
Students who participated in the class shared their impressions: "I was interested to cook with Noto ingredients and it was great to be able to cook while having fun conversations with the other group members", "It was great to be given detailed and thorough instructions on cooking, such as how to grill the meat and how to control the heat", "I ended up burning the butter rice, but it was fun participating in my first cooking class" and "I am so glad to join today's cooking program!"
